GOLDEN POTATO CASSEROLE 
6 med. potatoes
1/4 c. butter
2 c. shredded Cheddar cheese
2 c. sour cream
1/3 c. grated onion
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes with skins, peel and grate into large bowl. In medium saucepan over low heat, combine 1/4 cup butter and cheese. Stir occasionally until almost melted.

Remove from heat. Blend in sour cream, onion, salt and pepper. Pour over potatoes. Stir lightly and turn into buttered casserole. Dot with 2 tablespoons butter. Bake at 350 degrees for 45 minutes.
