DIRTY RICE DRESSING | |
Turkey giblets Salt Red pepper flakes 2 lbs. ground beef 1/2 lb. hot pork sausage 1/2 tsp. thyme 1 lg. onion, chopped 2 garlic cloves, minced 1 c. celery, chopped 1/2 c. green pepper, chopped 1 c. uncooked rice 5 green onions, chopped 1/4 c. minced parsley Salt and pepper to taste Boil turkey giblets in 3 to 4 cups of water with salt and red pepper flakes until tender. Remove giblets and save the water. Chop giblets. In a large skillet, brown ground beef, sausage, and thyme; add salt and pepper to taste. Add chopped giblets. Separately saute, onion, garlic, celery, and green pepper. Combine meat and vegetables; add rice and 2 cups of water from giblets. Cover; cook on low heat for 15 minutes. Add green onions and parsley. Cover and cook an additional 15 minutes. |
