PIZZA CRUST | |
2 1/2 to 3 c. flour 1 pkg. dry yeast 1 tsp. salt 2 tbsp. oil 1 c. warm water In mixer bowl combine 1 1/4 cups flour, yeast and salt. Stir in warm water and oil. Beat at lowest speed of electric mixer for 1 1/2 minutes, scraping bowl constantly. Beat 3 minutes at high speed. Stir in as much of the remaining flour as possible with spoon. Turn out on slightly floured surface. Knead enough remaining flour to make it moderately stiff dough that is smooth and elastic. Let rise for 10-12 minutes. Divide pizza dough in half. On lightly floured surface divide dough into thirds. Roll each third into 11-inch circles. Build up edges. Bake at 425 degrees for 12 minutes or lightly brown. Add topping; bake for 10-15 minutes more. Makes 2 (12 inch) pizzas. |
