SENATOR RUSSELLS' SWEET POTATO SOUFFLE | |
3 to 4 lg. fresh sweet potatoes (3 to 4 c. mashed sweet potatoes) 1 c. sugar (decrease sugar if using canned potatoes) 2 eggs, beaten 1 tbsp. vanilla 2 c. miniature marshmallows 1/2 c. butter 1/4 tsp. salt 1/4 tsp. nutmeg Melt butter and marshmallow. Mix all ingredients together, thoroughly pour into buttered casserole. TOPPING: 1 c. brown sugar 1/4 c. flour 1/3 c. butter 1 c. chopped nuts Mix with fork and sprinkle on top of souffle. Bake at 350 degrees for 30 minutes. |
