OATMEAL CAKE 
1 c. oatmeal
1 1/4 c. boiling water
1 stick butter, melted
1 c. white sugar
1 c. brown sugar
2 eggs, well beaten
1 tsp. vanilla
1 1/3 c. plain flour
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. baking soda (leave soda out if self rising flour is used)

Pour water over oatmeal; let stand 20 minutes. Cream butter, sugar. Add eggs, dry ingredients, vanilla and oatmeal last. Bake for 35 minutes at 350 degrees test with toothpick for doneness.

TOPPING: 1 cup brown sugar, 1/2 stick butter (melted), 1/2 cup cream, 1 can coconut, nuts if desired. Mix well and spread on cake while hot and brown in oven.
