4 c. mashed potatoes
8 oz. pkg. cream cheese
1 beaten egg
1/3 c. finely chopped onion
1/4 c. chopped pimento
1 tsp. salt
Dash of pepper

Blend potatoes and cream cheese until well mixed. Add other ingredients and place in 1 quart casserole. Bake at 350 degrees for 45 minutes.
