APPLESAUCE CAKE 
1 c. sugar
1/2 c. butter
1 egg, well beaten
1 1/2 c. sweetened applesauce
2 tsp. baking soda dissolved in 1/4 c. hot water
1 tsp. cinnamon
1/8 tsp. salt
2 tsp. cocoa
1/2 tsp. cloves
3/4 c. raisins
1 c. chopped nuts
1 tsp. vanilla
2 c. flour

Cream butter and sugar. Add well beaten egg and the applesauce. Mix thoroughly. Sift flour, cocoa, cinnamon, cloves and salt together. Mix with raisins and nuts. Add gradually to apple mixture. Beat well. Add soda and hot water mixture and vanilla. Bake at 350 degrees for 25 to 30 minutes. Bake in layer pans.

ICE WITH CARAMEL COCONUT ICING:

1 1/2 c. brown sugar
3/4 c. cream or milk
1 c. coconut
2 tbsp. butter
1/2 tsp. vanilla

Cook sugar and cream until it forms a soft ball in cold water. Add butter and vanilla. Cool. Beat to almost the consistency to spread. Add coconut. Ice between layers and on top of cake. (Not on the sides.) Place under broiler until icing bubbles.
