LITE OATMEAL COOKIES 
1 1/4 c. butter
3/4 c. brown sugar
1 egg white
1 tsp. non-fat dry milk
1 tsp. corn oil
1 tsp. vanilla
1 c. whole wheat flour
1/4 c. unbleached flour
1 tsp. cinnamon
1/4 tsp. nutmeg
2 c. old fashioned oats
1/2 c. white raisins
1/2 c. chopped walnuts

Blend butter and sugar until light and fluffy. Combine egg white, dry milk, corn oil and beat until frothy. Add vanilla and frothy mixture to first ingredients and beat for 1 minute. Add dry ingredients and mix thoroughly until well blended. Add raisins and nuts and drop by spoonfuls on cookie sheet. Bake at 325 degrees for 11 minutes for soft cookies and 15 minutes for crisp.
