HONEY OATMEAL COOKIES 
1 c. butter
3/4 c. honey
3/4 c. brown sugar
1 egg
1/2 tsp. vanilla
1/4 tsp. baking soda
1 1/4 c. all-purpose flour
2 c. chopped walnuts or pecans
2 c. dark seedless raisins
2 2/3 c. oatmeal (quick or old fashioned), uncooked

Preheat oven to 350 degrees. Cream together butter, honey, and brown sugar until smooth. Add the egg and vanilla; blend. Add the baking soda and flour; mix together well. Add all remaining ingredients and mix together well. Drop by teaspoonful onto ungreased cookie sheet. Bake 8 to 12 minutes or until golden brown. Makes 5 dozen.

Perfect Oatmeal Cookies! I substituted coconut for 1 cup of the nuts and used a mix of raisins and craisins. Needed a tad longer in the oven than the recipe suggests. The hint of honey flavor is surprisingly fabulous :) These look & taste like cookies you'd get at a bakery. Super Yummie!
