OATMEAL HONEY COOKIES | |
1 cup butter flavored shortening 1 cup firmly packed dark brown sugar 1 egg 1/2 cup honey 1/4 cup water 1/4 cup granulated sugar 1 1/2 tsp. vanilla 1 1/4 cups all-purpose flour 1 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. salt 3 cups old fashion oatmeal (nor instant or quick cooking) 1 cup raisins (optional) 1/2 cup chopped pecans (optional) Heat oven to 350°F. Spray baking pan lightly with cooking spray or grease lightly with butter flavored shortening. Combine shortening, brown sugar, egg, honey, water, granulated sugar and vanilla in a large bowl. Beat at low speed of electric mixer until blended. Increase to medium and beat until light and creamy. Sift flour, cinnamon, baking soda and salt together twice. Add to cream mixture in small amounts at low speed, blending well after each addition. Increase speed to medium. Beat until well blended. Stir in raisins and nuts, if used. Drop by heaping tablespoons onto baking sheet. Bake at 350°F for 12-14 minutes or until golden brown. Cool 3-5 minutes before removing to a large plate. Makes 3 dozen large cookies. |
