OATMEAL APPLE COOKIES 
1/2 c. shortening
1 c. brown sugar
2 well beaten eggs
1 3/4 c. flour
1/2 c. oatmeal
1/4 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1 c. chopped walnuts
1 1/2 c. chopped raisins
1 raw apple

Cream shortening and sugar. Add eggs; cream well. Add remaining ingredients in order given above. Drop on greased cookie sheet. Bake at 375 degrees for 10 minutes.

Love this recipe. I soaked the apple bits in 1-2 tablespoons of milk before adding them to the batter. This kept the apples extra moist. I also just about doubled the cinnamon and added a sprinkle of allspice. I didn't have raisins or walnuts on hand, so I omitted both and the recipe was still delicious.

A very useful recipe. Left out the walnuts and chopped raisins, grated the apple, didn't have any butter so used oil and squeezed in some yogurt. Yummy and I am not the world's best cook. thank you

I made these with whole wheat flour and brown sugar substitute for my husband and son who are both diabetic and they were great! Its a new family favorite.
