MADE AHEAD POTATO CASSEROLE 
4 c. potatoes, cooked and cubed
1 c. grated American cheese
2 tbsp. pimento
1 can cream of chicken-mushroom soup
1/4 c. chopped onion
1/2 c. buttered bread crumbs
Salt and pepper

Mix soup, cheese, onion, pimento and salt and pepper. In greased 1 1/2 quart casserole layer cheese mixture and potatoes. Sprinkle with bread crumbs. Bake at 325 degrees for 45 minutes.
