BUTTERMILK PIE 
1 c. buttermilk
1 stick butter
1 2/3 c. sugar
1 tbsp. lemon extract
4 tbsp. plain flour
2 eggs

Cream butter, sugar, and flour. Add eggs and mix well. Add buttermilk and lemon extract. Pour in 2 unbaked pie shells. Bake at 350 degrees for 1 hour. Sprinkle top with grated lemon rind or nutmeg.
