JUDY'S HOLIDAY FRUITCAKE | |
1 1/2 c. seedless raisins, soaked & drained 1/2 c. quartered dates 3/4 c. slivered blanched almonds 1 c. chopped pecans 1 (1 lb.) pkg. "Mor fruit" brand candied fruits 6 tbsp. butter 1/2 c. sugar 3 eggs 3/4 c. sifted all purpose flour 3/4 c. uncooked oatmeal 1/4 tsp. salt 1/4 tsp. powdered cloves 1/4 tsp. powdered nutmeg 1/2 tsp. powdered cinnamon 3 tbsp. orange juice Mix fruits and nuts together in a large bowl. Beat butter in mixing bowl until soft. Cream with sugar. Add eggs, 1 at a time, beating well. Mix dry ingredients together. Gradually add all but about 3/4 cup dry ingredients to butter mixture, mixing well. Add orange juice. Mix the 3/4 cup dry ingredients with the fruits and nuts. Pour batter over fruit, mixing well. Start oven at 275 degrees. Grease and flour 2 (9"x5"x3") pans or 4 smaller pans. Pour batter into prepared pans. Bake for 1 1/2 hours. Let cool thoroughly in pans. Brush with orange juice. Wrap tightly in heavy duty foil and store in a cool place, but NOT in the refrigerator. Be sure to make this 3 to 5 days ahead of time so it can age. |
