CHOCOLATE CHIP SNOWBALLS
(MICROWAVE)
 
3/4 c. butter, softened
1 tbsp. water
1 tsp. vanilla extract
1/2 tsp. almond extract
1/3 c. sugar
1/8 tsp. salt
1 3/4 c. all purpose flour
1 pkg. (6 oz.) semi sweet chocolate chips
1 c. chopped pecans, optional
Confectioners' sugar

In large mixer bowl; combine butter, water, vanilla, almond extract, sugar and salt. Stir in flour, pecans if desired and chocolate chips to form a stiff dough. Divide dough into quarters. Divide each quarter into 10 to 12 pieces and shape into 1-inch balls. On round microwave proof plate, arrange 6 balls in a circle. Microwave on high approximately 1 1/2 minutes until cookies are set.

If they seem to be baking unevenly, try them on a microwave trivet. Cool on wire racks. Repeat with remaining cookies. Roll in confectioners' sugar. Makes approximately 3 to 3 1/2 dozen.

Since microwave ovens vary in power, you may need to adjust your cooking time.
