HONEY BRAN MUFFINS 
2 c. San Antanio River Mill Honey Bran Muffin Mix
2/3 c. water
1 egg yolk
1/2 c. raisins or nuts (optional)

Preheat oven to 400 degrees. Grease muffin pan. Mix water and add yolk in a medium bowl. Add muffin mix. Stir well with a spoon until mix is moistened (stir in raisins or nuts).

Fill muffin cups 2/3 full. (An ice cream scoop works well to portion batter.) Bake 20 to 25 minutes or until firm on top. Yield: 6 muffins.
