EASY CHICKEN AND BROCCOLI
CASSEROLE
 
6 pieces chicken breasts
1 can cream of mushroom soup
1 can cream of chicken soup
1/3 c. mayonnaise
1 tbsp. lemon juice
Grated onion to taste (optional)
1 (10 oz.) pkg. chopped broccoli, thawed and drained
1 to 1 1/2 c. grated cheese (Longhorn)
1/2 c. fine bread crumbs

Cook chicken pieces by bringing them to a boil and then lower to a simmer for approximately 35 to 40 minutes. After cooked, remove skin from chicken and cut into bite size pieces. Place chicken pieces in bottom of 9 x 12 inch casserole dish. Combine soups, mayonnaise, lemon juice, and onion in mixing bowl. Pour mixture over chicken. Next, spread broccoli as third layer. Top with grated cheese followed by bread crumbs. Bake, uncovered, at 350 degrees for 50 to 55 minutes. Easy and Yummy too!!!
