ONE EGG MUFFINS 
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
3/4 c. milk
1 egg, beaten
1/3 c. melted shortening
Flavoring

Combine first 4 ingredients; make a well in center of mixture. Combine milk, egg and shortening; add to dry ingredients stirring just until moistened. Spoon into greased muffin pans. Bake at 425 degrees for 20 minutes. Yield 12 muffins.
