RAINBOW SHRIMP SALAD 
1 can (4 1/2 to 5 oz.) shrimp, rinsed and drained
3 c. cooked macaroni
1/4 c. chopped celery
1/4 c. chopped green pepper
1 c. salad dressing (to include 1/6 c. Western dressing or in proportion to color or taste desired)
1/4 c. pimento
1/4 c. minced onion
1/2 tsp. salt
1/4 tsp. pepper

Combine shrimp, macaroni, celery, green pepper, pimento and onion in a large bowl. Cover and chill. Just before serving, stir together salt, pepper and dressings. Toss with other mixture. Garnish with tomatoes (optional).
