FILLED VALENTINE COOKIES 
1/2 c. shortening (butter)
1 c. sugar
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. baking soda
1/2 tsp. salt
Filling: cherry pie filling

Cream shortening, sugar, eggs and vanilla. Sift dry ingredients and blend with creamed ingredients.

Form a portion into a ball and roll out on floured surface as for sugar cookies. Cut with a large heart shaped cookie cutter. Place 1/2 of cookies on cookie sheet. Place some pie filling in center of each place another cookie on top of each and pinch together around edges. Bake at 400 degrees until done, about 10 minutes.
