BAKED FISH WITH VEGETABLES | |
Olive oil 1 1/2 c. sliced onion 1/2 tsp. paprika 1 tsp. sugar 1 lemon 1 tsp. salt 1/4 tsp. pepper 1/8 tsp. cayenne pepper 2 lg. tomatoes, sliced 1/2 lb. mushrooms, sliced 5 green onions, chopped 1/4 c. sherry 1/2 c. buttered bread crumbs 1 1/2 lbs. fish fillets (not steaks), preferably sole, snapper, etc. Smear 1/2 teaspoon olive oil in a glass pan. Heat 3 tablespoons olive oil and saute onion in a frying pan until transparent. Season with paprika and sugar and saute 1 more minute. Cover bottom of glass pan with onions. Rub fish with lemon and place over onions. Sprinkle with cayenne and salt and pepper. Top with sliced tomatoes. Heat 2 tablespoons of olive oil and saute mushrooms 2-3 minutes. Add sherry and saute 1 minute more. Add green onions and saute 1 minute. Place mixture over fish. Cover with wax paper and bake at 400 degrees for 15 minutes. Uncover and top with bread crumbs and bake for additional 15 minutes. Heat frying pan with 1 teaspoon butter and add bread crumbs and saute until slightly browned. |
