MINCE COOKIES 
1 c. butter
2 c. firmly packed brown sugar
2 eggs, well beaten
1 1/3 c. (half of 28 oz. jar) None Such Mincemeat (rum flavored)
1 tsp. grated lemon rind
1 tsp. baking soda
4 c. sifted flour
1 tsp. salt

Cream butter until fluffy. Add sugar gradually, beat until light. Stir in eggs. Add mince meat and lemon rind; blend. Sift flour, soda and salt. Blend into mincemeat mixture. Drop teaspoonfuls on greased baking sheets 2" apart. Bake in moderately hot oven, 375 degrees, until golden brown, about 10 minutes. Remove and cool on rack immediately.
