FRIED CHICKEN WITH BUTTERMILK 
1 pkg. chicken parts
1 c. buttermilk
1 egg, beaten and mixed with milk
2 c. all-purpose flour
1/4 c. cornstarch
1 tsp. each salt, pepper and nutmeg
Low fat oil, peanut oil preferred

Mix flour thoroughly. Clean and wash chicken, pat dry. Dip in buttermilk mixture and then in flour mixture and let stand on rack for a few minutes to set. Heat oil and fry until golden brown. Excellent.
