BUTTERMILK SCALLOPED POTATOES 
The buttermilk bakes into a remarkably cheesy tasting sauce. Very simple to make.

1/4 c. whole wheat flour
1 tsp. salt
1/8 tsp. pepper
2 lg. baking potatoes, peeled and thinly sliced
2 tbsp. butter buds
1 med. onion, chopped
2 c. skim buttermilk (check label, buy the 1 g. per cup)
Pinch paprika

Preheat oven to 350 degrees. In a shallow dish combine flour, salt and pepper. Dredge potatoes in the flour mixture and place them in a shallow 2 quart baking dish. In a small skillet sprayed with vegetable oil, saute the onions for about 5 minutes or until tender. Spoon the onions over potatoes and pour buttermilk over top. Sprinkle paprika over potatoes and bake for 1 to 1 1/4 hours or until the potatoes are tender.
