CAJUN CAKE | |
2 c. flour 1 1/2 c. sugar 1 1/2 tsp. baking soda 1/4 tsp. salt 2 eggs 20 oz. can crushed pineapple with juice Mix all ingredients and pour into a greased 9x13 pan and bake at 350 degrees for 30-35 minutes. (Note: This contains no oil or shortening.) While hot, spread with Cajun Cake Topping. CAJUN CAKE TOPPING: 1 stick butter 1 sm. can evaporated milk 1 c. sugar 1 c. chopped pecans 1 c. shredded coconut 1 tsp. vanilla Mix milk, sugar and butter in saucepan. Bring to boil. Simmer 5 minutes, stirring often. Remove from heat. Add other ingredients. Pour immediately on Cajun Cake. |
