ENCHILADA CASSEROLE 
2 lbs. cheese, grated
12 eggs
3 chopped onions

Line a 9 x 12 inch casserole with tortillas, but first dip them in Las Palmas Enchilada sauce. I first lay the tortillas in the center of the dish, and then line the outside of the dish and overlap them over the edge of the dish. Pour some sauce on the bottom of the dish.

Mix the grated cheese, the chopped boiled eggs, and the onions which have been sauteed and some olives and fill the casserole. Cover with tortillas, first down the center, then fold the overlapped ones over the center ones. Before adding the mixture into the casserole add some sauce so they won't be dry. Cover the tortillas with grated cheese and some olives and bake at 350 degrees until cheese is all melted.
