MEXICAN LASAGNA 
1 1/2 lb. ground beef
1 tsp. seasoned salt
1 pkg. taco seasoning
1 c. diced tomatoes
2 (8 oz.) cans tomato sauce
1 can diced green chilies
8 oz. ricotta cheese
2 eggs
9 torn corn tortillas
10 oz. Monterey Jack grated cheese

Brown beef and drain, add seasoned salt, taco seasoning, tomatoes, tomato sauce and green chilies. Bring to a boil, reduce heat and simmer 10 minutes. Combine ricotta cheese and eggs.

In 13 x 9 inch pan spread 1/2 meat mixture, top with 1/2 tortillas, 1/2 ricotta cheese mixture and 1/2 of grated cheese and repeat. Bake at 350 degrees for 20-30 minutes. Let stand 10 minutes before cutting into squares.
