MEXICAN LASAGNA 
1 1/2 lbs. ground beef, browned and drained
1 pkg. Taco seasoning mix
1 c. diced tomatoes (fresh or canned)
2 (8 oz.) cans tomato sauce
1 (4 oz.) can diced green chilies
1 c. cottage cheese (Ricotta)
2 eggs, beaten
10 corn tortillas
2 1/2 c. (10 oz.) grated Monterey Jack cheese

In large skillet, boil then simmer for 10 minutes the beef, taco mix, sauce and chilies. Combine cottage cheese and eggs. Repeat layering of meat mixture, tortillas, cottage cheese and Monterey Jack in 13 x 9 x 2 inch dish. Bake at 350 degrees for 20-30 minutes. Can be served with sour cream, lettuce and tomatoes.
