CREAMY POTATO PUFF 
4 c. hot mashed potatoes
1 (8 oz.) cream cheese
1 egg (beaten)
1 tsp. salt
Dash pepper
Finely chopped onion (optional)

Combine softened cream cheese and potatoes, mixing until well blended. Add remaining ingredients. Place in 1 or 1 1/2 quart casserole dish. Bake at 350 degrees for 45 minutes. 6 to 8 servings.
