SHRIMP & RICE CASSEROLE | |
4 c. sliced zucchini (100) 4 c. sliced summer squash, yellow (100) 1 bell pepper (15) 1 lg. onion (60) 6 stalks celery (15) 2 c. uncooked rice (400) 1/2 lb. mushrooms (40) 1 lb. cooked shrimp, cooked in spices (400) 15 oz. Polly-O Ricotta cheese (375) 1 tsp. Teriyaki Sauce (10) 1 dash chili powder Total calories 1515. Saute onions, celery, bell pepper, zucchini and squash. Cook shrimp in boiling water with shrimp and crab. Boil, drain and cut up shrimp. Place cooked rice into pan, layer sauteed vegetables then shrimp, mushrooms and then cheese. Bake 20 minutes in oven set at 350 degrees. Do not preheat oven. Makes 4 (5 x 7 x 3 inch) servings at 379 calories per servings. |
