APPLE BLUEBERRY CAKE 
1/2 c. butter
1/4 c. whipping cream
1 1/4 c. sugar
3 eggs
2 1/3 c. flour
2 tsp. baking powder
1 tsp. salt
2 c. (2 med.) tart cooking apples, peeled cored, coarsely chopped
2 c. blueberries

Heat oven to 350 degrees in 1 quart saucepan. Cook butter and cream over low heat, stirring occasionally, until butter melts (7-8 minutes). Set aside.

In large bowl combine sugar and eggs. Beat at medium speed, until well mixed. Add butter mixture, flour, baking powder and salt. Continue beating until smooth. Stir in apple and blueberries.

Spread into greased and floured 13 x 9 inch baking pan. Bake for 45-55 minutes or until toothpick comes out clean. Serve warm with sweetened whipped cream.

I like this cake, however, next time I would bake it in a Bundt pan and drizzle powdered sugar icing on it. It was good; it just needed a little something.
