CREAMY AVOCADO & POTATO SALAD 
4 tbsp. olive oil, divided
1 clove garlic, minced
1 tsp. dried thyme
1 tsp. dried oregano
1 tsp. dried basil
2 lb. russet potatoes
10 oz. avocado
1/4 cup cilantro
2 tbsp. lime juice
salt and pepper

Preheat oven to 350°F.

In a small bowl, mix minced garlic, dried herbs and 2 tablespoons of olive oil.

Wash and dice the potatoes.

Place the potatoes in a baking tray and season with the dried herb mixture, coat evenly.

Bake in the oven for 25 minutes. Set aside and let it cool

In a large bowl, gently mash avocados using a potato masher.

Stir in cilantro, remaining 2 tablespoons olive oil, and lime juice.

Season with salt and pepper.

Combine and toss in the roasted potatoes.

Serve at room temperature.
