CINNAMON STARS 
6 egg whites

4 c. confectioners' sugar
Grated rind of a lemon (AT LEAST 1 tsp.)

Continue beating until completely blended. Reserve 1/2 to 3/4 cup mixture for centers of cookies.

2 tsp. cinnamon
2 pkgs. (ca 20 oz.) ground almonds

Add almond mixture to egg mixture. "Fold" in with spatula. Roll out small amounts (about a cup each), on a board "floured" with confectioners' sugar until about 1/4 inch thick. A pastry cloth might be best.

This IS a mess! Cut in star shapes (I made my cutter from a large can top; I haven't seen a commercial one that size, they're either larger or smaller). Place cookies on a well greased baking sheet. Bake 10-12 minutes at 350 degrees.
