CHICKEN CASSEROLE 
1 stewing hen, boned and chopped (or any leftover chicken)
1 1/2 c. chopped celery
1 med. onion, chopped
1 1/2 c. cheese, diced
1/2 tsp. pepper
4 c. crushed Ritz crackers
1/2 tsp. salt
2 eggs, well beaten
1 can cream mushroom soup
3 c. chicken broth

Combine all ingredients and mix well. Pour into a 9 x 13 inch greased pan. Bake at 350 degrees for 45 minutes or until celery is done. A great casserole for Sunday when all the kids come home to eat. A family favorite.
