CHERRY CHEESECAKE CUPCAKES 
2 (8 oz.) pkg. cream cheese (we use Philly light)
3/4 c. sugar
2 eggs
1 tsp. vanilla
12 vanilla wafers
Cherry pie filling

Combine cream cheese, sugar, eggs and vanilla in large bowl. Beat until smooth. Place a vanilla wafer in each of 12 foil wrappers in cupcake pan. Fill each 3/4's full with mixture. Bake at 375 degrees for about 15-18 minutes. Cool and top with cherry pie filling. Refrigerate and enjoy!

This is one of our favorite desserts and so easy! Em can make it herself (a 9 year old).
