APRICOT SPREAD 
1 c. dried apricots
1 1/2 c. water
1 tbsp. cornstarch
1 tbsp. water
1/4 tsp. lemon juice
10 packets Equal sugar replacement

Soak apricots in 1 1/2 cups water for 5 minutes in a quart glass measure. Microwave on high (100%) for 3 to 5 minutes until soft. Blend or mix well.

Dissolve cornstarch and Equal in 1 tablespoon of water, add lemon juice. Combine cornstarch and apricot mixture. Stir. Microwave on high (100%) for 3-5 minutes; stir thoroughly. Spread warm or cold on cakes, breads or pancakes. Keep refrigerated. Portion: 1 teaspoon. Exchange - free calories 5 per portion.

Since microwave ovens vary in power, you may need to adjust your cooking time.
