MOM'S HOE CAKES 
Pour boiling water or scalded milk on salted cornmeal, let set a little. Pour enough liquid to make meal soft. Put bacon fryings on griddle heat. Add two or three tbsp. of batter on griddle. Smooth over surface making the cake about 1/2 inch thick and round in shape. Brown and turn and brown other side. Serve hot with butter.
