HONEYED CARROTS WITH RAISINS | |
1 lb. med. carrots, scraped & diagonally sliced 1/3 c. unsweetened orange juice 1/4 c. raisins 1 tbsp. honey 1/8 tsp. ground nutmeg Combine carrots, orange juice, raisins, honey and nutmeg in a medium saucepan. Bring mixture to a boil. Cover; reduce heat and simmer 12 minutes or until carrots are tender. Transfer mixture to a serving bowl. Serve immediately, using a slotted spoon. Yield: 4 servings. |
