WHOLE WHEAT CARROT CAKE 
1 c. honey
1/2 c. oil
1 tsp. vanilla
4 eggs
2 1/2 c. whole wheat flour
2 tsp. baking powder
2 tsp. cinnamon
2 tsp. baking soda
1/2 tsp. salt
3 c. shredded carrots
1/2 c. raisins, nuts & sunflower seeds, if you have

In large bowl, combine honey, oil and vanilla. Beat in eggs. Gradually add dry ingredients. Gently fold in carrots, seed, nuts and raisins. Pour into greased and floured bundt pan. Bake at 350 degrees for 50-60 minutes.
