MARY ANN'S NO SUGAR CARROT CAKE 
3 c. grated carrots
1/2 c. raisins
1 c. chopped nuts
2 c. sifted whole wheat flour
1/2 tsp. salt
2 1/2 tsp. baking soda
2 tsp. baking powder
3 tsp. cinnamon
1 tsp. allspice
1 tsp. nutmeg
1 c. honey
1 1/3 c. oil
5 eggs, separated

Mix carrots, raisins and nuts together. Mix together in a separate bowl the flour, salt, soda, baking powder, cinnamon, allspice and nutmeg. Beat together honey and oil. Add this to carrot mixture. Add dry ingredients to carrot mixture. Separate eggs and beat yolks until frothy. Mix into cake mixture. Beat egg whites until very stiff. Fold carefully into egg mixture. Pour into a tube pan or 2 loaf pans.

Bake at 350°F for about 1 hour.

Topping:

1 (8 oz.) pkg. cream cheese, softened
1 tsp. vanilla
juice of 1/2 lemon
1/4 to 1/2 c. honey

Mix thoroughly and spread on cooled cake.
