SUGAR 'N SPICE CARROT CAKE 
4 eggs
1 1/2 c. firmly packed light brown sugar
1 1/2 c. grated carrots
1 1/3 c. vegetable oil
2 1/4 c. all purpose flour
2 1/2 tsp. ground cinnamon
1 1/2 tsp. baking soda
1 tsp. salt

Beat eggs and sugar fluffy and thick. Add carrots and oil, blend well. Combine flour, cinnamon, baking soda and salt. Bake at 350 degrees.

Frosting: blend (1 - 3 oz.) pkg. cream cheese softened and 1/4 cup butter, softened. Gradually add 2 1/2 cups confectioners' 10 x sugar and 1 teaspoon grated orange peel.
