SUGAR AND SPICE CARROT CAKE 
4 eggs
1 1/2 c. light brown sugar
1 1/2 c. grated carrot
1 1/3 c. oil
2 1/4 c. all-purpose flour
2 1/2 tsp. cinnamon
1 1/2 tsp. baking soda
1 tsp. salt

Beat eggs and sugar until fluffy and slightly thick - add carrots and oil - blend well. Combine flour, cinnamon, baking soda and salt - mix well.

Bake in 13 x 9 x 2 inch baking pan at 350 degrees for 45 minutes or until cake tests done. Let cool and frost.

FROSTING:

3 oz. cream cheese, softened
1/4 c. butter
2 1/4 c. 10X sugar
