SUGAR AND SPICE CARROT CAKE 
4 eggs
1 1/2 c. firmly packed light brown sugar
1 1/2 c. grated carrots (about 3 lg.)
1 1/3 c. vegetable oil
2 1/4 c. all purpose flour
2 1/2 tsp. ground cinnamon
1 1/2 tsp. baking soda
1 tsp. salt

Beat eggs and sugar until fluffy and slightly thick. Add carrots and oil; blend well. Combine flour, cinnamon, baking soda and salt. Stir into greased 13"x9"x2" baking pan. Bake at 350 degrees for 45 minutes or until cake tests done. Cool in pan. Frost.

FROSTING: Blend 1 (3 oz.) package cream cheese, softened and 1/4 cup butter, softened. Gradually blend in 2 1/4 cups confectioners' sugar and 1 teaspoon grated orange peel.
