CAREFREE CASSEROLE 
1 1/3 c. Minute Rice
1/4 c. chopped onion
1 tbsp. butter
1 can cream of mushroom soup
1 1/4 c. water
2 c. diced chicken or 1 can tuna
1 c. cooked peas
1/2 tsp. salt
1/8 tsp. pepper
1/2 c. grated cheddar cheese

Measure rice in 1 1/2 quart casserole. In saucepan, saute chopped onion in butter. Blend in cream of mushroom soup and water. Stir in chicken (or tuna), peas, salt and pepper. Bring to a boil, stirring occasionally. Stir into rice in casserole. Sprinkle with cheese. Bake, covered, at 400 degrees for 20 minutes.
