SUPER CARROT-RAISIN SALAD 
7 or 8 lg. carrots
1 c. raisins
1 1/4 c. mayonnaise
3 tbsp. honey
3 tsp. vinegar
1 tsp. cinnamon

Peel or scrape carrots and grate coarsely. Add raisins and mix. Mix mayonnaise, honey and vinegar. Thoroughly add cinnamon to the mayonnaise and mix. Pour over carrots and toss. Let marinate at least 2 hours or longer if possible before serving. This makes a large salad for a gathering. It can be divided for a smaller salad. Will keep good for 1 week.
