BROCCOLI RICOTTA QUICHE 
3/4 c. chopped cooked broccoli
1 unbaked 9 inch pie shell
1 tbsp. finely chopped onion
2 eggs
3/4 c. plain low fat yogurt
1/2 c. Ricotta cheese
1/2 c. grated cheddar cheese
1/4 tsp. salt
1/8 tsp. white pepper
Grated nutmeg

Spread broccoli in bottom of pastry shell. Sprinkle on onion. Combine eggs, yogurt, cheeses, salt and pepper. Beat until smooth. Pour mixture over broccoli. Sprinkle grated nutmeg on top. Bake in preheated 375 degree oven for 30 minutes, or until filling is firm and pie shell is golden. Serves 4.
