STUFFED CUTLETS 
4 lg. veal or pork cutlets
4 thin slices ham
4 slices Mozzarella

Pound out cutlets very thin. Place ham slice on half with Mozzarella cheese slice. Fold cutlet over filling and dip in flour, then egg wash. Coat with fresh bread crumbs making sure edges are closed. Saute quickly in hot olive oil until golden brown on each side.
