CHINESE CHICKEN SALAD 
1 c. boiled chicken, shredded
1/2 head of iceberg lettuce, shredded
2 scallions, cut into 2 inch strips
1/2 sm. bunch of fresh coriander, chopped (if unavailable, add 1/2 tsp. ground coriander to dressing)
3 tbsp. toasted almonds, sliced

Toss all ingredients together. Add the following dressing.

DRESSING:

2 tbsp. vegetable oil
1 tbsp. sesame oil
1 tsp. soy sauce
1 tsp. salt
2 tsp. lemon juice
1/2 tsp. honey
1/4 tsp. dry mustard
1/4 tsp. hot sauce
