JANIE'S BLACKBERRY CAKE | |
3-4 c. berries (Dew or Black) 1/2 c. milk 1 1/2 c. sugar 2 tsp. vanilla 2-3 tbsp. cornstarch 1 box butter cake mix 3 eggs 1/3 c. oil 3/4 - 1 1/4 c. water Oleo or butter Preheat oven to 350 or 375 degrees. Grease 9"x13" cake pan. Mix together sugar, milk, cornstarch and vanilla. Add berries and gently mix together. Pour into cake pan. Blend cake mix according to the instructions and pour over berry mixture. Bake about 1 to 1 1/2 hours until berries seem firm. Cake topping will get hard but when you remove the cake from the oven, brush or rub butter over cake to soften it. Just another way Janie found to use our plentiful native berries. |
