ORIENTAL PEPPER STEAK 
2 c. leftover roast (uncooked chicken or steak may be used)
1 1/2 c. green pepper, sliced into thin strips
3 fresh tomatoes, peeled & quartered
2 tbsp. cornstarch
1 can consomme, undiluted
1 clove garlic, chopped fine
2 tbsp. soy sauce
2 tbsp. oil

Make a paste of soy sauce and cornstarch. Mix with meat until well coated. Saute green pepper in oil. In large skillet, until crisp-tender. Remove pepper from pan. Put meat in pan with garlic. Saute meat for a few minutes. If using raw meat, saute until cooked through. Add green pepper, tomatoes and consomme. Stir well and simmer for about 5 minutes. Serve over rice or noodles.
